A kitchen has its own language

Walk into a busy KITCHEN at seven in the evening and almost nothing said is ordinary English. Somebody moving with a hot pan shouts 'behind'. An instruction is answered with 'heard' or 'yes chef', so the person giving it knows it landed. 'Hands' means a plate is ready and someone needs to carry it right now.

When an ingredient runs out it is 'eighty-sixed' and comes off the MENU immediately, before anybody can order it. None of this is showing off. In a hot room full of knives, flames and people carrying things they cannot see past, saying exactly the same words every time is a safety system.

Everything has to land at once

The hardest part of the job is not cooking any single dish. It is that a table of six ordered six different things with six different cooking times, and all of them have to arrive at the pass together, hot, at the moment the WAITER is standing there to take them.

So a CHEF calls the order backwards from the finish. The steak goes on before the fish, the fish before the sauce, and everything is timed so the slowest item and the fastest arrive at the same second. Multiply that by fifteen tables all ordering at slightly different moments and you have the actual skill of a professional kitchen.

The specialists at the edges

A SOMMELIER spends years learning wine and sits blind tasting exams where the task is to identify a glass — grape, country, region, vintage — from taste alone. The senior qualifications have famously brutal pass rates, and people re-sit them for a decade.

The BARISTA is doing something similar with a much shorter deadline. Espresso is ground coffee, hot water and about thirty seconds; change the grind by a fraction and the same beans turn sour or bitter. Both jobs look like pouring drinks and are closer to running a small laboratory during a rush.

The job nobody notices until it stops

The DISHWASHER is the pivot the whole restaurant turns on. A kitchen owns a limited number of pans, and a dining room a limited number of plates; if the wash area falls twenty minutes behind, the CHEF runs out of pans, the BUSSER cannot clear tables and the whole service seizes up.

Plenty of celebrated chefs started there, and most will say it taught them more about how a restaurant works than any other station. The CLEANER who comes in afterwards is the reason the place can legally open in the morning.

Almost everybody's first job

Restaurants employ enormous numbers of people at the start of their working lives, because the roles can be learned quickly and the hours suit students. A HOST, a BUSSER or a CASHIER can be trained in an afternoon; the polish takes much longer.

The trade-off is the hours. Everyone else is eating at seven on a Saturday, so the WAITRESS, the BARTENDER and the PASTRY section are working. The pay often depends partly on TIPS, the shifts are split around lunch and dinner, and an APRON goes on at four in the afternoon and comes off near midnight.

How to play

Drag across a word, or tap its first and last letter — both work. Each word you find locks in with its own colour and ticks off the list, so you always know what's left to find.
